Fresh Apple or Pear Cake (Just like Grandma would make)

I recently dusted off my mom’s classic KitchenAid mixer and dove into her recipe box. Her Apple Cake recipe called for “cooking oil” (yuck!), so I brightened it up with Blood Orange Olive Oil. Fresh pears instead of apples? Oh, yes!
Ingredients
- 2 cup Sugar
- 3/4 cup Branch and Vines Blood Orange Olive Oil
- 1/2 cup Extra Virgin Olive Oil
- 3 large Eggs
- 2 tsp Vanilla
- 3 cups Flour
- 1 tsp Salt
- 1 tsp Baking Soda
- 1/2 tsp Cinnamon
- 3 cups diced Apple or Pear
- 1 cup chopped Nuts (walnut or pecan)
- 1 cup Raisin or chopped Dates

Directions
- Combine sugar, eggs oil, vanilla and cream together
- Sift flour, salt, baking powder, cinnamon together
- Mix dry and wet together well.
- Add fruit, raisins, nuts into batter. It will be thick, I find a strong wooden spoon or strong mixer work best.
- Place in a oil and floured Bundt pan
- Bake at 350 degrees for 1 hour and 20 minutes or until knife comes out clean when tested
Topping
Melt in saucepan 1/2 cup brown sugar, 1/2 stick butter, 1/6 cup milk. Boil 2 minutes, stir constantly to keep from sticking or burning. Drizzle over cake just before serving.
